CURRY AND RICE – CURRIED SAUSAGES - From the Golden Wattle Cookbook
INGREDIENTS-
500 grams steak . |
1 dessertspoon jam. |
1 onion. |
1 teaspoon of lemon juice. |
1 apple. |
1 tablespoon flour. |
1 banana. |
Salt and pepper. |
1 tablespoon sultanas. - |
1 dessertspoon sugar. |
1 tablespoon fat. |
2½ cups water or stock. |
1 level tablespoon of curry powder. |
½ teaspoon ground ginger (optional) |
METHOD-
1. Prepare vegetables and fruit, cut into slices.
2. Fry vegetables and fruit in fat in saucepan.
3. Lift out on to plate.
4. Cut meat into small cubes, toss in seasoned flour. Fry till brown.
5. Add to meat curry powder and remainder of flour. Brown. Add lemon juice, ginger, sultanas, sugar, jam. `
6. Add vegetables, fruit and liquid. Simmer 2 hours.
7. Serve on hot dish, garnished with a border of rice.
8. Accompaniments-—Wedges of lemon, sliced cucumber, sliced banana, toasted coconut, peanuts, chutney
Note—Cooked meat may be used instead of steak. Sausages and chops may be curried in the same way. Fat should be removed.
